  • 1 lb fresh carrots,washed, peeled and sliced
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Salt and pepper to taste
  • Optional: a sprinkle of fresh thyme or rosemary

Directions:

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the carrots with olive oil, honey, salt, and pepper until well coated.
